Hand-picked between July and October on the north coast of Brittany, Coco de Paimpol beans are the only dried beans to benefit from a PDO (since 1998). Their ivory-white, soft, and fine beans are adorned with an extremely thin skin that disappears during cooking to reveal an inimitable creamy texture, slightly sweet with a delicate nutty note.
