🍴 How to consume and store it?
Carrots can be stored for about 1 to 2 weeks in the vegetable drawer of your refrigerator. To prevent them from becoming soggy, remove the tops upon receipt, as they draw moisture from the root.
In the kitchen, carrots are exceptionally generous: grated raw with a squeeze of lemon 🍋, glazed in butter, roasted in the oven with spices, in a creamy purée or in a detox juice... They also enhance soups, stir-fries, pies, and even cakes (do you know the famous carrot cake 🧁?). In short, they are a culinary chameleon.

The carrot is an elongated root, usually orange, but also found in purple, yellow, white, or red. Its flesh is firm, juicy, and naturally sweet.
It is very rich in beta-carotene (provitamin A), which is excellent for eyesight and skin. It also contains soft fiber, which is perfect for digestion. There are varieties of early carrots (smaller and tender), or storage carrots (firmer and longer lasting).

Originally, the carrot wasn't orange! It was white or purple, and it was the Dutch, in the 17th century, who selected it to give it its bright color, in homage to the royal family of Oranges 🍊.
Even today, the purple carrot is making a comeback on our plates, to the delight of those curious about taste and color. Another anecdote: during the Second World War, the English made people believe that their excellent night vision came from their massive consumption of carrots, to disguise the use of radar... amazing, right?
