Incorporate the egg yolk and very cold water, then mix quickly without kneading. Form a ball, wrap it in cling film, and let it rest in the refrigerator for at least 30 minutes. Blind bake the crust:
Preheat your oven to 180°C (350°F). Roll out the dough on a lightly floured surface and line a 20-22 cm (8-9 inch) tart pan. Prick the bottom with a fork. Cover with parchment paper and baking weights (or dried beans). Bake for 15 minutes. Remove the weights and paper, then continue baking for 5 to 10 minutes, until the crust is golden brown. Let cool completely on a wire rack.
Make the pastry cream:
Split the vanilla pod in half and scrape out the seeds. Heat the milk with the pod and seeds. In another bowl, whisk the egg yolks with the granulated sugar until pale, then incorporate the cornstarch. When the milk simmers, remove the vanilla pod and pour half of the hot milk over the yolk/sugar mixture, whisking well. Pour everything back into the saucepan with the remaining milk and thicken over medium heat, stirring constantly, for 2 to 3 minutes after boiling. Off the heat, add the butter and stir until melted. Pour the cream into a dish, cover with cling film directly on the surface, and let cool. Once cool, place it in the refrigerator for at least 1 hour.
Prepare the light strawberry cream:
Whip the cold liquid fresh cream (30% fat) into stiff peaks. Loosen the cooled pastry cream by whisking it vigorously, then delicately fold the whipped cream into the pastry cream in several additions, using a spatula, to obtain a light and airy cream.
