Hey foodies! 👋 Today, we're diving into a timeless classic on our tables: grated carrots. But beware, not just any! This is the "homemade, quick, and amazing" version, the kind of salad that everyone loves, from the youngest to the grandpa. Forget bland and soulless versions, we're going to give them a boost!
Why grated carrots are life?
Honestly, who doesn't love them? They're fresh, crunchy, full of vitamins... and most importantly, super easy to prepare. It's my secret weapon when I don't have time to spend hours in the kitchen but still want a flavorful and colorful side dish. A simple dish that always makes an impression.
Ingredients
For 4 people
🥕500 gCarrots
🍋1Lemon (juice)
🫒3 tbspOlive oil
🍯1 tspDijon mustard
🧂0.5 tspSalt
🌶️1 pinchPepper
🌿2 tbspFresh parsley (chopped, optional)
The Steps
Step 1Prepare the carrots. Start by peeling your carrots, then grate them finely. Whether by hand with a classic grater or with a food processor, the important thing is to have nice strands. Put them in a large salad bowl.
Step 2Prepare the vinaigrette. In a small bowl, mix the lemon juice, olive oil, Dijon mustard, salt, and pepper. Whisk well so that everything emulsifies a bit and the mustard dissolves perfectly. This is the secret to a smooth and flavorful sauce!
Step 3Mix everything. Pour your vinaigrette over the grated carrots. Mix vigorously, either with two spoons or by hand (with gloves, it's better to avoid staining!), to coat all the carrots well. If you're using fresh parsley, now's the time to add it.
Step 4Let rest (or not!). Ideally, let your grated carrots rest in the fridge for at least 15-20 minutes before serving. This allows the flavors to blend well and the carrots to soak up the vinaigrette. But if you're in a hurry, no problem, it's already delicious as is!
There you go, it's that simple! Once you've tasted this homemade version, the supermarket one will seem rather sad, believe me. This is the kind of recipe that proves you don't need to make things complicated to enjoy good food. Perfect for a light lunch or to accompany a good meat or fish dish. So, grab your graters!
For a gourmet twist, feel free to add some toasted pumpkin or sunflower seeds, or even a little fresh chopped cilantro. It adds crunch and super nice new flavors!
