The LENTO workshop was born from the desire to transform marine species in a natural and creative way, and to promote fish caught or raised in a responsible and sustainable manner.
We carefully apply an ancestral preservation technique - cold smoking - promoting healthier and more sustainable food, and allowing the original taste to be enhanced.
In the workshop, ingredients, origin and method are transparent.
CREATIVITY - TIME EXPLORED
Creativity is the driving force behind our craftsmanship.
We create unique and constantly updated salting formulas, made from aromatic herbs and berries.
Each fish is then smoked with a specific type of wood such as alder, beech, oak, lemon, almond, or olive. We patiently seek out the subtlety of the smoky notes to create unique and delicate flavor combinations.
TASTE - TIME SUSPENDED
We believe in both the strength of taste and its subtlety.
Our recipes allow for a long time for all stages of processing. These deep breaths are necessary to delicately reveal the essence of the products and the authenticity of the flavors. Our recipes are developed specifically for each species of fish to respect its nature and the notes that compose it.
Each tasting is a unique experience.
