Located on the edge of the Rambouillet forest, the Ferme de la Tremblaye dates from the 19th century.

The farm gradually turned to the production of cow's milk and cheese from the 1970s and the goat farm was then built in 2000. Today, the farm includes 130 hectares of farmland and 180 hectares of forest, a herd of around one hundred dairy cows and 700 Alpine goats, fed with the farm's produce (grass, fodder, etc.). Around thirty farm cheeses are produced on site.

Production: Persillé is made with farm goat's milk. The curd is then dry-salted, not brined.
