1. Clafoutis with rice flour and mirabelles 🍮

Ingredients (serves 6): 500g pitted mirabelle plums, 100g rice flour, 3 eggs, 40g sugar, 250ml almond milk, 1 tbsp liquid vanilla.

Preparation: Preheat the oven to 180°C. Whisk the eggs and sugar, then stir in the flour, milk, and vanilla until the batter is smooth. Place the mirabelle plums in a buttered dish and pour the batter over them. Bake for 35 minutes. The top should be golden brown and the center should be soft.

2. Soft Mirabelle Plum Muffins 🧁

Ingredients (12 muffins): 250g rice and buckwheat flour (2/3–1/3), 2 eggs, 80g coconut sugar, 80ml olive oil, 150ml coconut milk, 200g mirabelle plums, halved, 1 tsp gluten-free yeast.

Preparation: Dry mix (flour, sugar, yeast). Add eggs, milk, and oil, mix quickly. Gently fold in the mirabelle plums. Fill your molds and bake for 20 minutes at 180°C. Enjoy warm for extra softness.

3. Buckwheat & Mirabelle Plum Crumble 🍑

Ingredients (serves 4): 400g mirabelle plums, 100g buckwheat flour, 50g almond powder, 60g sugar, 60g cold butter (or vegetable margarine).

Preparation: Preheat oven to 190°C. Place the mirabelle plums in a dish and sprinkle with a little sugar. Mix the flour, sugar, and almond powder, then add the butter until you get a coarse crumble. Crumble over the fruit. Bake for 25 minutes, until the crumble is crisp.

4. Gluten-free financiers & mirabelles 🍰

Ingredients (8 financiers): 100 g almond powder, 50 g rice flour, 100 g icing sugar, 4 egg whites, 50 g brown butter, 8 mirabelle plums.

Preparation: Preheat to 180°C. Sift together the almond flour, flour, and sugar. Lightly whisk the egg whites, fold into the powders, and add the browned butter. Pour into the financier molds, placing half a mirabelle plum on each. Bake for 15 minutes, until lightly browned.
