1. Spicy Mirabelle Plum Salad 🥗
As a refreshing starter or side dish, this spicy salad combines the tangy sweetness of Lorraine PDO mirabelle plums with crisp cucumber and warm spices. Halve 200g of pitted mirabelle plums, thinly slice a small cucumber, and toss with arugula leaves. Prepare a vinaigrette with lime juice, honey, Espelette pepper, and olive oil. Add fresh coriander, toasted pumpkin seeds, and finish with a few shavings of Parmesan. Your salad sparkles with yellows and greens; the sweet and spicy balance is just perfect!

2. Mirabelle plum chutney for poultry 🍗
Sweet and savory chutney is a perfect accompaniment to white meats and roasts. In a saucepan, sauté a sliced onion in a drizzle of oil. Add 300g of quartered mirabelle plums, 50g of brown sugar, 100ml of cider vinegar, a pinch of ground ginger, and a crushed garlic clove. Simmer for 20 minutes until the mixture thickens. Adjust with salt and mild chili. Serve it warm over chicken cutlets or roast turkey; it adds a kick to every bite!
3. Pan-fried duck breast with mirabelles 🦆
Duck breast and mirabelle plums are a classic with a twist. Sear a duck breast skin-side down over medium heat to render the fat, then finish for 4 minutes on the flesh side. Remove the meat, deglaze the pan with 150 ml of chicken stock, 150 g of whole mirabelle plums, and a spoonful of honey. Reduce for 3–4 minutes, then add a knob of butter to thicken the sauce. Slice the duck breast and coat generously. Serve with gratin dauphinois or sautéed potatoes.
4. Vegetarian tagine with mirabelles 🍛
For a veggie version, try this mild and fragrant tagine. In a tagine dish or casserole dish, sauté an onion, grated fresh ginger, and ras el hanout. Add 2 carrot sticks, 1 diced sweet potato, and 200g cooked chickpeas. Pour in 400ml of stock, cover, and simmer for 15 minutes. Then stir in 200g pitted mirabelle plums and a few sprigs of coriander. Continue simmering for 5 minutes, then sprinkle with toasted flaked almonds. A dish rich in color and flavor, guaranteed meat-free!
