Who hasn't dreamt of perfectly cooked rice, with separate, fluffy grains that are tender to the core without being sticky? I certainly have! For a long time, it was my culinary nemesis. Overcooked rice, undercooked rice, clumpy rice... But that's ancient history! Today, I'm sharing my method, the one that reconciled me with rice. Get ready to say goodbye to sticky rice for good.

Why does my rice stick after cooking?

Cooking rice is an art, but there's a scientific reason behind sticky rice: starch! When rice is rinsed, excess starch on the outside of the grains is removed. If not rinsed, this starch is released during cooking, making the rice viscous and sticky. It's the number one culprit for our culinary disappointments. But don't panic, it's easy to fix!

Which rice to choose for separate grains?

For rice with well-separated grains, ideal as a side dish, choose long-grain or basmati rice. These varieties contain less starch than, for example, short-grain rice, which is perfect for risottos or sushi. Thai or jasmine rice is also an excellent option, with its delicate fragrance. In my home, we're fans of basmati for its lightness and slight nutty flavor. It's the one I use almost always. And you, which one is your favorite?

Ingredients

For 4 people
🍚200 g Basmati rice (or long-grain)
💧400 ml Water
🧂0.5 tsp Fine salt (e.g., Guérande salt)
🧈5 g Butter (optional)

Steps for foolproof rice

Step 1

Rinse the rice until the water runs clear.

This is THE key! Put your rice in a fine-mesh sieve and rinse it under cold tap water. Stir it with your fingers. The water will initially be cloudy—that's the starch washing away. Continue rinsing until the water running through is perfectly clear. It takes a few minutes, but believe me, it makes all the difference!

Step 2

Use the correct water proportion: 1 volume of rice to 2 volumes of water.

For 200 g of rice, you need 400 ml of water. This is a simple and effective golden rule. Pour the rinsed and drained rice into a heavy-bottomed saucepan. Add the water and salt. If you like, a small knob of butter for even shinier and more fragrant rice is always a good idea.

Step 3

Bring to a boil, then simmer over very low heat.

Place the saucepan over high heat and bring to a boil uncovered. As soon as the water simmers, reduce the heat to minimum, cover tightly, and cook for 10 to 12 minutes. Most importantly, do not lift the lid during cooking! Steam is essential for proper water absorption.

Step 4

Let it rest off the heat, then fluff.

Once the cooking time is over, turn off the heat and leave the covered saucepan on the hot (but off) stove for 5 to 10 minutes. This resting time allows the grains to finish swelling and separate well. Then, remove the lid and gently fluff the rice with a fork. And there you have it, perfect rice, every time!

Lou's extra tips for even better rice

A zest of lemon for shine!

For even whiter rice and more vibrant grains, add a small lemon slice or a few drops of juice to the cooking water. It doesn't change the taste, but it makes all the difference visually. Plus, it adds a little kick!

Watch the size of your pot!

Don't use a pot that's too big or too small. The rice needs space to expand, but the water shouldn't evaporate too quickly. A medium-sized pot with a thick bottom is ideal for good heat distribution. If your pot is too large, the water will evaporate too quickly, and the rice won't cook evenly. Too small, and it might boil over. The right balance is key!
