Rice sticks because of the starch on its surface. That's the culprit! If you don't rinse it, the starch is released during cooking and turns your rice into a compact mass. The Steps: My Foolproof Method
Rinsing the rice is key! Put your rice in a fine-mesh sieve and rinse it under cold water. Gently rub it with your hands until the water runs clear. It's a small effort, but believe me, it makes all the difference. We're aiming for transparency, like with a clear conscience!
The right proportion: 1 volume of rice to 1.5 volumes of water. For me, this is the golden rule, the one that never betrays me. In a heavy-bottomed saucepan, pour the rinsed rice, then the water and a good pinch of fine salt. If you have beautiful Guérande salt, even better!
Cook in unison, gently and covered. Bring to a boil over high heat, then immediately reduce to very low heat. Cover tightly and cook for 10 to 12 minutes without EVER lifting the lid. No, no, not even for a second! Steam is sacred; it does all the work.
Resting is as important as cooking. Once the 10-12 minutes have passed, turn off the heat and let the rice rest, still covered, for 5 to 10 minutes. This is where it absorbs the last drops of water and becomes perfectly fluffy. Rice needs its nap!
