How to make tender baked beets?
- Preheat your oven to 180°C fan-assisted. Scrub your beets under running water, trimming off just the roots/tails. No need to peel them before cooking; the skin protects the flesh and is very easy to peel off afterward!
- Wrap each beetroot in a square of baking paper and then in aluminum foil (this keeps in moisture, prevents oxidation and concentrates the flavors). Place them on a baking sheet.
- Bake for 45 to 60 minutes depending on the size. Test the doneness by inserting the tip of a knife: it should sink in like butter.
- Let it cool then rub the skin with your fingers or a clean cloth: it comes off on its own!
- Enjoy in salads, pickles, or roasted like fries. To boost the flavor: add olive oil, vinegar, fresh herbs, cumin or coriander seeds, crumbled feta cheese… 😋

Why cook whole beets?
Cooking them whole preserves their color, softness, and texture. Wrapped, they stay moist without drying out, and their sweetness is even more pronounced. You can also cook them in cubes for a faster process!
Should beets be peeled before cooking?
No, keep the skin on! It protects the flesh and is very easy to remove after cooking. It's practical, waste-free, and keeps your hands clean 😅.
How do you know if they are cooked?
Pierce with the tip of a knife: it should go in without forcing. If necessary, extend in 5-minute increments. The smaller ones cook faster!
What to do with the leaves and peels?
