How to Cook Mushrooms in an Air Fryer

🍄 How to Cook Mushrooms in an Air Fryer

Air fryer mushrooms have become my favorite way to prepare them. It's incredible how flavorful this method makes them—crispy on the outside, tender on the inside, in just 10 minutes. Do you want to cook your mushrooms in an air fryer so they retain their woody flavor and a great texture? Discover my step-by-step tips for successfully making this everyday classic!

⏲️ The Basics: Time and Temperature

With mushrooms, it's simple: no fuss. There are three key variables: size, temperature, and most importantly, not overcooking them.

📌 Golden Rule: Mushrooms release water — that's normal. The key is not to overcrowd them and to make sure they don't turn into chips. A knife should easily penetrate them when cooked.

For whole button mushrooms (300-400g)

  • Temperature: 180°C (350°F)
  • Time: 10-12 minutes
  • Test: They should be golden but still a bit soft

For diced or quartered mushrooms

  • Temperature: 190°C (375°F)
  • Time: 8-10 minutes
  • Tip: Shake halfway through cooking for even browning

For stuffed mushrooms

  • Temperature: 170°C (325°F)
  • Time: 12-15 minutes
  • Tip: Drizzle with a little oil to prevent drying out

🔧 Preparation: 5 Minutes

Ingredients (for 1 serving)

For 1 serving(s)
  • 🍄 300 g Button Mushrooms
  • 🫒 1 tbsp Olive oil
  • 🧂 1 pinch Salt
  • 🌶️ 1 pinch Pepper
Step 1

Cleaning

Gently brush the mushrooms with a brush or a damp cloth. Do not use water — they would absorb too much moisture and release even more water during cooking. Remove the earthy base.

Step 2

Cutting

Cut the mushrooms into quarters or dice, as you prefer. For small ones, you can leave them whole. Uniformity is key — pieces of the same size cook evenly.

Step 3

Seasoning & Placement

In a bowl, mix your mushrooms with olive oil, salt, pepper, and your spices (garlic, herbs, thyme). Arrange them in the basket without overcrowding — they need space for heat to circulate well.

Step 4

Cooking

Temperature: 180°C (350°F) • Time: 10-12 minutes • Shake halfway through cooking. Remove them as soon as they are golden — no longer, or they will turn into chips!

🍽️ 8 Recipes to Make the Most of Them

Simply roasted mushrooms are good, but here's how to turn them into a memorable dish:

1️⃣ Classic Roasted Mushrooms (Garlic & Thyme)

Time: 12 min | Difficulty: Very easy

Mushrooms + olive oil + crushed garlic + thyme sprig + salt + pepper. Air fry at 180°C (350°F) for 10-12 minutes. Sprinkle with fresh parsley just before serving. This is the essence of roasted mushrooms.

2️⃣ Parmesan Au Gratin Mushrooms

Time: 13 min | Difficulty: Easy

Cook mushrooms for 8 minutes, then generously sprinkle with grated Parmesan. Return for an additional 3-4 minutes at 190°C (375°F) until golden brown. The cheese crisps, the mushrooms remain tender.

3️⃣ Cream and Mustard Mushrooms

Time: 14 min | Difficulty: Easy

Cook mushrooms for 10 minutes. Mix crème fraîche + Dijon mustard + herbs, pour over mushrooms. 3-4 extra minutes at 170°C (325°F). Creamy sauce, tender mushrooms.

4️⃣ Tandoori Mushrooms (Exotic)

Time: 12 min | Difficulty: Easy

Coat mushrooms with a mixture of yogurt + tandoori masala + lemon. Air fry at 180°C (350°F) for 10-12 minutes. Garnish with fresh cilantro. Warm and spicy flavor.

5️⃣ Stuffed Mushrooms (Parsley & Garlic)

Time: 15 min | Difficulty: Easy

Use chopped mushroom stems + garlic + parsley + breadcrumbs + Parmesan. Fill the caps. Air fry at 170°C (325°F) for 12-15 minutes. Crispy filling, tender inside.

6️⃣ Mushrooms with Beurre Blanc & Lemon

Time: 12 min | Difficulty: Very easy

Mushrooms + soft butter + lemon zest + chopped parsley. Air fry at 180°C (350°F) for 10-12 minutes. Fresh lemon juice upon serving. Light, fresh, gourmet.

7️⃣ Provençal Mushrooms

Time: 13 min | Difficulty: Easy

Mushrooms + sun-dried tomatoes + black olives + garlic + Herbes de Provence. Air fry at 180°C (350°F) for 10-12 minutes. Intense Mediterranean flavors.

8️⃣ Dried Mushroom Chips (Crunchy Snack)

Time: 20 min | Difficulty: Very easy

Finely slice mushrooms (2-3 mm). Air fry at 120°C (250°F) for 18-20 minutes to dehydrate. Crunchy and flavorful snack to nibble on.

💡 Tips & Variations

  • Not too much oil: 1 tbsp is enough for 300g. Mushrooms already release water.
  • Shake halfway through: This is essential for even browning and to prevent them from sticking.
  • Different varieties: Try wild mushrooms, shiitakes, oyster mushrooms — they cook the same way.
  • Optional preheating: 3 minutes is good for better searing on the surface.
Charles's tip: For super flavorful mushrooms, use butter instead of oil if you have time (less risk of releasing water). Add garlic + thyme + a splash of balsamic vinegar at the end of cooking — it completely transforms the dish!

❓ Frequently Asked Questions

Why do my mushrooms release too much water?

That's the nature of mushrooms! But you can limit it: don't wash them with water (brush them), don't overcrowd the basket, and most importantly, only salt them at the end (salt retains water). A high temperature (180-190°C / 350-375°F) also helps.

Can you cook frozen mushrooms?

Yes, but add 3-4 minutes to the cooking time. Frozen mushrooms already release a lot of water, so be careful they don't turn into chips.

Which mushrooms for the air fryer?

All of them! Button mushrooms (classic), shiitakes, oyster mushrooms, wild mushrooms. Each variety brings its own flavor. Button mushrooms are the easiest to start with.

How to prevent mushrooms from turning into chips?

Crucially: do not exceed 12-15 minutes maximum. A lower temperature (170-180°C / 325-350°F) also helps. Remove them as soon as they are golden — they continue to cook for 1-2 minutes after removal.

Can you cook them with other vegetables?

Yes, but pay attention to timings: mushrooms cook quickly (10-12 min) while carrots take 15-18 minutes. Add the mushrooms after other vegetables to prevent them from turning into chips.

Are mushrooms as good the next day?

They keep for 2-3 days in the fridge. To reheat: 2-3 minutes in the air fryer at 160°C (320°F) to regain some crispiness. But honestly, they're best fresh out of the air fryer.
