HowTo — Quick confit garlic (Air Fryer)

  1. Prepare : Peel the cloves. Place them in a ramekin/small casserole dish that can be used in the Air Fryer, cover with olive oil. Salt very lightly, add thyme/bay leaf if you like.
  2. Cover the ramekin with aluminum foil (light dome) to prevent it from oxidizing/browning too quickly.
  3. Bake at 160°C for 22–28 min (200g base). Open halfway through cooking and stir gently.
  4. Finishing : Remove the foil for the last 2–3 minutes if you want some initial coloring.
  5. Cool quickly, transfer to a clean jar, cover well with oil. Refrigerate ≤ 7 days. For longer storage → freezer (in portions).

Why cover with aluminum?

This creates a protected environment (gentle heat + oil) that preserves without burning the pods. You can remove the foil for 2–3 minutes at the end to brown.

Which oil should I choose?

Olive for flavor 💚, or neutral/olive blend for a lighter flavor. Always cover the pods to the top .

Conservation: how long?

In the refrigerator, ≤ 7 days , always submerged. Do not leave at room temperature. Otherwise, freeze (garlic puree + oil) in ice cube trays.

What if I want to preserve whole heads?

Cut off the top of the bulbs, oil the cut, and wrap in foil. 180°C, 20–25 min, +5–10 min for very large bulbs.
