- Leave to sterilize for 10 minutes , then remove the jars using tongs, turn them over and leave to cool without moving.
Why should jam jars be sterilized?
Sterilization prevents mold growth, preserves the color and flavor of the fruit, and allows you to keep your homemade jams for up to a year without any unpleasant surprises. While sugar helps preserve them, a well-sterilized jar ensures you avoid fermentation and bulging lids.
What is the best method?
- Boiling water 🥗: the most reliable method for all fruits. Tested and validated by generations of grandmothers!
- In the oven : Place the open jars on a baking sheet at 120°C for 10 minutes, then fill while still hot. Be careful with the lids, which don't like dry heat.
- Without sterilization : possible if the jam is very sweet (more than 60%), but riskier for low-acid fruits.
How to avoid failures?
- Fill the jars to the brim to limit air.
- Wipe the screw thread well before closing to ensure a tight seal.
- Turn the still-hot jars upside down to complete the vacuum.
- Use clean, undamaged lids (avoids rust marks).
How long does homemade jam keep?
Properly sterilized, your jam will keep for 12 months away from light and moisture. Once opened, keep it in the refrigerator and consume it within three weeks. If you notice any mold, throw the jar away without hesitation!
Bonus tip: express sterilization in the microwave 🔥
For empty jars only: microwave them for 1 minute (without the lid). Be careful, they come out very hot! Useful for small batches or if you're in a hurry.
