  1. Quickly clean the mushrooms with a damp cloth or brush. Avoid washing them under water so they don't become waterlogged 💦.
  2. Cut into thick strips or wedges, depending on your preference. The larger the strips, the longer they will take to cook.
  3. Heat a large frying pan with a drizzle of neutral oil (and/or a little butter to taste).
  4. Add the mushrooms when the pan is very hot. Sear them over high heat without covering, stirring regularly. Let them brown gently to obtain a nice golden brown 😋.
