🛒 Ingredients

For 2 bowls
🥔 350 Potatoes (Firm Flesh)
🫒 1 Olive oil
🧂 0.5 Fine salt
🌶️ 1 Paprika

🍟 Step-by-step instructions for a perfect crispy crust

1. Slicing: Peel your potatoes and cut them into 1-2 mm slices. Using a mandoline is highly recommended to ensure uniform thickness and even cooking.
2 The secret of starch: Soak your slices in cold water for 15 minutes. This bath helps remove the starch that would make your chips sticky or soggy.
3. Drying (Crucial): Drain them and dry them thoroughly with a cloth. If any moisture remains, they will "boil" instead of toasting.
4. Seasoning: In a bowl, mix the slices with the oil and spices. Massage each slice well so that it is slightly shiny.
5. Cooking: Place them in the basket (do not overfill). Cook at 180°C for 10 to 12 minutes . Shake the basket every 4 minutes!
💡 Crispy tip: Let the chips cool on a wire rack for a few minutes after removing them from the basket. This is when they finish hardening and become extra crispy!

My chips are soggy, why?

Two possible causes: either they weren't dry enough before cooking, or the basket was too full. Hot air needs to be able to circulate around each chip.

Can we keep them?

Yes, in an airtight container for 48 hours. If they lose their crispness, reheat them for 2 minutes in the Air Fryer at 180°C.
