Forget the industrial versions. With your Air Fryer, prepare homemade cordon bleu with an ultra-light Panko breading and cheese that really stretches when you cut it, all without the smell of frying.

💡 Why is Cordon Bleu with an Air Fryer unbeatable?

Traditional pan-frying is tricky: the breading absorbs the oil and the cheese often melts out before the chicken is cooked through. The Air Fryer solves this problem by instantly searing the breading with hot air. You get a golden, even result with 80% less fat. It's healthier, cleaner, and above all, much tastier!

For 2 cordon bleus
🍗 2 Chicken Escalopes
🥓 2 Slices of ham
🧀 60g Comté or Mozzarella
🍞 40g Panko Breadcrumbs
🥚 1 Beaten Egg

⚡ The steps to success

Step 1 Assembly: Flatten your escalopes well. Place the ham and cheese in the center. Fold over like a wallet. Use a toothpick if needed to seal the edges.
Step 2 : Coating: Dredge in flour, dip in beaten egg, and then generously coat in Panko breadcrumbs. Press firmly to ensure the coating adheres.
Step 3 Cooking: Preheat to 190°C. Lightly spray the cordon bleus with oil. Cook for 12 to 14 minutes , turning halfway through.
🤩 Tip: For an even thicker and crispier crust, do a "double coating": dip twice in egg and breadcrumbs.

🤫 My little secrets

  • The choice of cheese: Comté adds flavor, Mozzarella adds a stringy texture. The mix of the two is perfect!
  • Panko: This Japanese breadcrumb stays crispier than classic fine breadcrumbs in the Air Fryer.
  • Spraying: Don't forget the oil spray (olive or sunflower) to obtain that essential golden color.

Can frozen cordon bleu be used?

Yes! Allow approximately 15-18 minutes at 180°C without defrosting. The result will be much better than in the oven.

How can I prevent the cheese from leaking in the basket?

The secret is to wrap the cheese tightly in the ham before closing the chicken cutlet. The ham acts as the first protective barrier.
