What is ethylene ?

It is the molecule naturally produced by fruits and vegetables responsible for their ripening when the ethylene concentration is high, it triggers the color change and sweeter taste of fruits like your bananas! When fruits or vegetables are stored together, the ethylene they produce accumulates and stimulates the ripening of other fruits and vegetables.

But how do you preserve your products while taking ethylene into account? 

The ideal would be to slow down ethylene production by putting your products under low pressure. What an idea!

A simpler tip is to put your fruits and vegetables in the right place, not with just anyone! And it doesn't have to be your fridge! It can alter the taste and texture of your produce.

First, we must differentiate between climacteric fruits (those that continue to ripen after being picked, such as tomatoes, bananas, kiwis, avocados) and non-climacteric fruits (those that must be purchased when fully ripe, because they will no longer ripen without their trees, such as strawberries, cherries, pineapples, or cucumbers).

This will prevent you from losing those strawberries you love so much. Avoid fruit baskets with mixed fruits!

This is to optimize their preservation, otherwise they will react with each other. This will prevent the last banana in the bunch from ending up all soft and brown. At my house, it ends up as a flambéed banana, which is not something we dislike...
