Easy to prepare, Caesar salad can also be made in many different ways, each more original than the last. One thing is certain: the basic ingredients are always the same: lettuce, hard-boiled eggs, croutons, parmesan cheese... and of course Caesar dressing.
- 2 chicken cutlets
- 1/2 lettuce
- 1 tablespoon of olive oil
- 2 slices of country bread
- 1/2 clove of garlic
- 1 pinch of paprika
- 20 g grated parmesan cheese
- For the sauce: 1/2 tablespoon of mustard 1 egg yolk 1 clove of garlic, chopped 10 cl of soybean oil 1/2 tablespoon lemon juice 1/2 tablespoon Worcestershire sauce salt and pepper
- Brush the chicken cutlets with olive oil. Grill or pan-fry them.
- Prepare the croutons by rubbing the country bread on each side with a clove of garlic. Drizzle with olive oil and grill or pan-fry for a few minutes.
- Prepare the sauce: Mix the mustard, egg yolk, chopped garlic, and oil. Season with salt and pepper, then add the lemon juice and Worcestershire sauce.
- Strip the lettuce leaves. Remove any tough stalks. Wash and drain the leaves thoroughly. Place them in a salad bowl. Add the chicken slices to the salad, then the paprika and the dressing.
- Mix gently. Add the croutons. Sprinkle with grated Parmesan cheese.
